Great meal or snack for children and toddlers. Can be frozen, perfect for kids lunch boxes.
2 Zucchini, grated
1 carrot, grated
1 small sweet potato, grated
1 can brown lentils, drained and rinsed
¾ cup SR flour
1 tsp curry powder
1 tsp oil for frying e.g. Rice bran oil, canola oil or spray oil.
Mix all ingredients. Heat non-stick fry pan with tsp oil. Fry fritters in batches. Serve warm or cooled.
