Last week I posted a recipe to encourage your toddler to eat their greens, or veggies in general. This week I am posting another tip/recipe to encourage vegetable eating:

Egg Bread (aka French Toast) with grated vegetables.      To serve one toddler

1 slice wholemeal bread

1 egg

1/3 zucchini, grated

1/3 carrot, grated

Avocado for topping (optional)

Small nob of butter (about ½ tsp).

1. Whisk egg with a fork in a large shallow bowl. Grate vegetables into egg and stir to combine. Dip bread into egg covering both sides well with egg and grated vegetables.

2. Heat butter in a non-stick fry pan. Add bread, pouring remaining egg and vegetables onto bread as it cooks. Cook about 2 minutes each side until golden brown and egg cooked.

3. Spread with avocado (optional) and cut into finger pieces to serve.
