Ok, so this recipe is more about getting your toddler to eat their vegetables rather than strictly greens…. But it’s still a good one!

 Vegetable Pikelets     makes 24 (halve recipe to make less)

2 eggs

2 cups SR flour (1 cup wholemeal 1 cup white)

2 cups grated vegetables like zucchini, carrot, sweet potato, corn kernels

1½-2 cup milk (depending on desired consistency)

Optional ½ cup grated cheese

1 Tbsp butter

 

Mix all ingredients except cheese in large bowl.

Melt ½ tsp butter in non-stick fry pan on medium-high heat. Add dollops of mixture (about 4-5 at a time). Cook until bubbles appear. Flip over and sprinkle with a little grated cheese while cooking the second side (the cheese should start to melt). Transfer to a plate and repeat.

Great as a mid-meal snack or a lunch meal. Can be eaten warm or cold so you can store cooked pikelets in the fridge for at least 2 days.
