This is a great wholesome savoury muffin recipe; by including vegetables, protein and dairy they are little meals in themselves. Keep in freezer and take out for easy kids lunches or mid meal snacks on the run. Great for mum and dad too!

It did not quite fill my 12-muffin tins, but I’m sure you could double it to make more.

185g tin pink or red salmon, mashed

Reserve liquid from salmon and mix with water to make ¾ cup

1 cup grated carrot

1 cup grated zucchini

1 egg, beaten

1 tsp baking powder

1 cup flour

100g feta cheese, cubed

Combine all ingredients in a bowl. Spoon into greased muffin tin. Bake in 200°C oven for 15 minutes.
