RECIPE: Chocolate Nut Butter Cups

Chocolate Nut Butter Cups (courtesy of Renee – thanks Renee, this looks like a great alternative to commercial chocolate this Easter!)

“Chocolate”:
6 tbsp coconut oil, melted
2/3 cup carob powder, sifted
1/8 tsp vanilla bean powder
Filling:
1/4 cup raw almond butter
1/4 + 1/8 tsp nutritional yeast
1/8 tsp vanilla bean powder

Instructions:
Melt the coconut oil in a bowl, remove from heat and whisk in the sifted carob powder and vanilla. Continue mixing until everything is combined.
Spoon about half the mixture in to the bottom of 8 muffin liners. Put them in the fridge to harden while you make the filling.
Mix together the filling ingredients and put into the hardened muffin liners. You want to try and spread the filling out as flat as possible so it’s easier to cover with the rest of the carob.
Spoon the other half of the carob mixture on top, making sure to spread out all the way to the sides of the cups. Return to the fridge to harden. Store in the fridge/freezer until ready to eat, as they become very soft at room temperature!
You can top with freeze-dried fruit e.g. raspberries or strawberries and/or nuts before freezing.
