Coconut Muesli Slice
Makes 16
1 ½ cup rolled oats
1 ¼ cup desiccated coconut
½ cup raisins
½ dried cranberries
1 Tbsp Chia seeds
½ tsp cinnamon
2 Tbsp hot water
½ cup honey (or you can use less e.g. 1/3 cup preferred)
1/3 cup coconut oil
2 eggs beaten
Grease a 28 x 18cm slice tin and line with baking paper. Pre-heat oven 160degrees (fan forced).
Mix oats, coconut, dried fruit, cinnamon, chia seeds in a bowl. In a separate bowl combine honey, coconut oil and hot water and stir until coconut oil and honey melt.
Add wet mixture to dry mixture and stir to combine. Stir in 2 beaten eggs.
Press into slice tin. Bake 25-30mins or until golden brown.
Remove from oven and slice into 16 even bars. Stand in tin for about 10mins until cooled. Turn out. Store in airtight container (can also freeze in a container between greaseproof paper for easy removal).
Nutrition Notes: While this recipe does not contain sugar, it does contain honey and dried fruit, which still provides significant ‘sweetness’ and calories. Be wary of recipes that are portrayed as ‘sugar-free’ or ‘healthy’ just because they do not contain sucrose, they often still contain significant amounts of honey or other forms of sugar. Despite this, I consider this recipe to a healthier ‘treat’, and tasty too!
