Give this tasty side dish a try this Christmas

2 bunch fresh asparagus

1 tsp seeded mustard

½ tsp Dijon mustard

1 Tbs olive oil

1 Tbs balsamic vinegar

Blanch asparagus until bright green (30-60 seconds), in a pan of boiling water. Drain and place in ice cold water and then remove, dry and place on serving plate

Make vinaigrette by combining olive oil, vinegar and mustard. Pour over asparagus and serve.
