This is lovely as a starter or with a platter.

700g chicken thigh fillets, skin and fat removed. Cut into 3cm cubes

1 Tbsp finely grated lemon rind

Small bunch fresh thyme leaves, stripped

2 crushed garlic cloves

2 Tbsp olive oil.

Skewers (pre-soaked in water for about 30-60mins if wooden).

Combine all ingredients in a bowl. Thread Chicken onto skewers and grill (or BBQ) for 2-3 minutes each side or until cooked through.
