Chocolate Chia Seed Pudding (serves 6)

400g tin coconut milk

2 Tbsp honey or maple syrup

2 Tbsp cocoa

4 Tbsp chia seed

2 Tbsp dried cranberries (or I use goji berries for an extra superfood boost!)

In a bowl whisk together coconut milk, honey and cocoa until dissolved. Add chia seeds and dried cranberries/goji berries and whisk until chia seed are well covered. Cover and refrigerate overnight.

Because this pudding is quite rich, it’s lovely served with a dollop of Greek yoghurt and berries / strawberries. 1-2 Tbsp of pudding is adequate for 1 serve.

 

Banana Chia Seed Pudding (serves 6)

1 ripe banana

1½ cups milk (cow, almond, soy, whatever takes your fancy)

1 tsp vanilla extract

1 tsp cinnamon

½ Tbsp honey (could do without if prefer less sweet taste)

½ cup chia seeds

Blend all ingredients except chia seeds. Transfer to a bowl and mix in chia seed. Cover and refrigerate overnight.

Serve as is, or with a dollop of Greek yoghurt and berries/strawberries, with the above chocolate chia pudding. We often have this dessert as a tasty (and healthy) family alternative to our usual natural yoghurt and fruit dessert.
