1 cup rolled oats
1 cup mixed nuts and seeds (e.g. sunflower seeds, pumpkin seeds, almonds)
(alternatively you can use 2 cups untoasted muesli)
½ cup cranberries or raisins
1 cup SR flour
75g butter
¼ cup honey
¼ cup brown sugar
Mix dry ingredients in a bowl. Melt butter in small saucepan. Remove from heat and add honey and sugar, stir until dissolved. Combine wet ingredients with dry ingredients.
Press into a greased slice tin and bake in moderate oven for 10-15mins.
This is a simple easy recipe that tastes great. If you want to try to improve its nutrition profile, you could swap butter for coconut oil and increase quantity of dried fruit (i.e. 1 cup instead of ½ cup) and then cut out the sugar. I might try this next time. But personally, I think if you are eating a ‘treat’ any wholesome ingredients are fine!
